“SUE’S SUPER SCRAMBLER DUST” MAKES TOFU A FAVORITE IN BALTIMORE (Distributed nationwide this summer)

TOFU JUST GOT BETTER! Vegetarian restaurateur Isabel Fabara and chef Sue Novak have brought healthy alternative foods to Baltimore, traditionally a crabcakes and corn-on-the-cob kind of city. With almost four hundred orders of Tofu Scramblers sold per week at Fabara’s One World Café restaurant, Baltimoreans seem to enjoy tofu for breakfast as much as good old fashioned scrambled eggs.

The secret to the success of One World Café’s Tofu Scrambler is a proprietary flavor blend developed by Novak called ‘Sue's Super Scrambler Dust.’ This dust, sprinkled into crumbled tofu, lends the color of scrambled eggs and adds flavor reminiscent of Middle Eastern cuisine.

“We want whole foods to be hip, not hippie,” said Fabara. “Our rising tofu entrée sales and repeat business shows that Sue’s Super Scrambler Dust is a long-lasting favorite here in Baltimore. One World Café gets a lot of attention because of Sue’s tofu creations.”
The dust is made of all natural ingredients including nutritional yeast, which adds protein and vitamins to the meal in addition to flavor. Packed with B-complex vitamins (including B-12), chromium and 18 amino acids, Sue’s Super Scrambler Dust is a source of many nutritional components that vegetarians have difficulty replacing in their diet. When added to tofu, the meal also provides iron, calcium, and isoflavones.

The scrambler dust has been successful at One World Café as well as Novak’s previous restaurant in West Virginia. The dust will be distributed nationwide this summer.
